Chicken & Bell peppers Noodles

Chicken bell peppers sauce with Soft noodles is a delicious combination and really easy to make.

Chicken bell pepper sauce:

Ingredients:

  • 1/2 kg Boneless chicken, cut into small pieces
  • 2 Big red bell peppers
  • 2 Green bell peppers
  • 2 Yellow bell peppers
  • 3 onions
  • 1 pod Garlic, chopped
  • 2 tsp of chilly vinegar 
  • Red chilly sauce
  • Soy Sauce
  • Tomato sauce
  • 1/2 tsp Black pepper 
  • 1 Tsp Chilly flakes
  • 1 Tsp Sugar
  • 2 Tsp Cornflour
  • 1 egg
  • 2 Tsp of breadcrumbs
  • Salt to taste

Procedure:

First cut all the veggies and keep it aside.

                        

Marinate the chicken with soy sauce, vinegar, black pepper,chilly flakes and sugar, mix one egg and a teaspoon of white oil for binding.
Marinate for 6 hours in the fridge.
Now take 4-5 tablespoons of oil in a wok or a Pan and let it come to the boiling point
In the mean time make a mixture of cornflour and breadcrumbs. And take out the chicken pieces and coat it with the mixture. Add salt according to your taste.just keep it in mind not to add too much salt as soy sauce is also salty.
Now fry the coated chicken pieces and keep it aside.


In the remaining oil first fry the garlic and onion slices.
When they are brown add the bell pepper s and fry only for 2 mins as we don't want the bell pepper store get very soft and soggy.
Now add the remaining marinated mixture and stir it for 1  min.


Lastly add 2 tsp of red chilly sauce, 4-5 tsp of tomato sauce and 2 tsp of soya sauce
Give it a final stir and it's ready.
If you want more spicy you can add green chilly sauce. I did not add as I prefer hot and sweet flavor.


Noodles 
I have used 2 packets of Hakka egg noodles.
8-9 flakes of garlic
4 tsp of Amul butter
Procedure 
Boiled 2 litres of water with salt
Then added the noodles. Let it boil till soft Then drain out the water.
Add 1 tsp to of oil so that these noodles don't get entangled.
Now take a wok and heat 4-5 tsp of butter.
Fry the garlic pieces for 30 seconds and add the boiled noodles and stir it well.

How to serve
In a plate first spread some spaghetti and on top of it serve the required amount of the Chinese chicken you have prepared.
You have enjoy this dish with sauces of your choice.

Honey lemon chicken with sesame seeds

Hi friends another yummy dish for you all which you can have with schezwan fried rice or steaming hot white rice too. I got the impetus to make it again when one of my school friends asked me for this recipe. I realised that it's been long time since I made this, As it needs frying. These days we are all health conscious (we must consider our lifestyles) that we get worried over deep fried snacks or fritters. 
But trust me this dish, tastes delicious only when you dip the chicken pieces in batter and deep fry it and coat it with the rich & savoury sauce.

Ingredients

  • Boneless chicken(cut into 1 inch pieces): 500 grams
    
  • Sesame oil for cooking
  • White sunflower oil for frying
  • Cloves of Garlic
  • 4-5 dry red chilli
  • Roasted sesame seeds: 3 tbsp
  • 2 lemons

For frying Batter

  • 3/4th cup of all purpose flour 
  • 1 egg (if you want better results use egg white only)
  • 1/2 cup of cornflour
  • 1/2 cup of cold water
  • 1/2 tsp of baking powder
  • 1 tbsp of sesame oil
  • 1/2 tsp of salt

For Sauce

  • 1 cup of honey
  • 1 tbsp of chilly vinegar
  • 1 tsp of tomato ketchup
  • 2 tsp of lemon juice
  • 1 tbsp of sesame oil
  • 1 tsp of cornflour 
  • 1/2 cup water
  • 1 tsp of salt

Method:

  1.  Marinate the chicken pieces with salt, pepper and lemon juice for an hour.

  2. Whisk the batter with all the batter ingredients (mentioned above) until it is neither too runny or too thick.

  


3. Heat enough sesame oil in a wok (for deep frying chicken)

4.When the oil is hot, dip the marinated chicken pieces one by one into the batter and then drop them in the oil for deep frying. While frying just keep it mind that you spread the chicken pieces properly to prevent them from sticking together.


5. Dish out the fried chicken and drain the excess oil on paper towels.

6. Mix all the ingredients for the sauce as mentioned above and keep it ready.


7. Now the final part:
  • Take another pan or wok and heat 2 tbsp of sesame oi.
  • Stir fry the garlic pieces and the red chilly pieces.
 
  • Once a nice aroma starts coming add the sauce which you have prepared and kept ready.
 
  • Stir it properly and cook in low flame till the sauce gets thickened.
 
  • Now add the fried chicken to the sauce and stir fry for another few minutes till all the chicken are covered with the sauce.
 
  • Turn off the stove/gas and add the roasted sesame seeds and stir it nicely.
~Serve hot with Chinese fried rice~

Chinese chili chicken

Hey everyone! This is my recipe for chili chicken, which is Chinese inspired. It's an all time favorite of my family, Whenever they're in a mood for something Chinese and there's chicken in the freezer, I go "It's time for some chili chicken". 

I've been making this since my high school days. It was the one of the first recipes I had learnt in my life. Before I got married the only thing I was really confident about in serving was my chili chicken and noodles. Hehehe. Hope You folks like it!

Ingredients:

  • Boneless chicken-500 grams
  • Eggs-2
  • Corn Flour- 4 Tbsp
  • Dark Soy sauce- 4 Tbsp
  • Garlic-6-8 pods (chopped)
  • Green chillies- 6 (thinly sliced)
  • Spring Onions /Shallots -2 twigs
  • Red Onion- 1 (chopped)
  • Sugar- 1/2 tsp
  • Vinegar- 1 tsp
  • Oil- 2 Tbsp
  • Tomato sauce- 2-3 Tbsp
  • Capsicum (green bell peppers)- 2 medium sized 
                 

Procedure:

  • Cut the chicken into medium sized chunks and keep it aside
  • Beat the eggs in a bowl with corn starch, black pepper powder,salt and soy sauce. Beat them all together really well.
  • Add the chicken pieces into the egg mix.
  • Coat all the chicken pieces well with the mixture and keep it aside for least for 20 minutes .
  • Heat sufficient oil in a pan and shallow fry the chicken, until they are golden brown.
  • Heat some oil in another pan, & add the green chillies, chopped garlic and onion & saute them for 2 minutes, Then add soy sauce, tomato sauce, sugar and vinegar into the pan.
  • Add the chicken to this mixture and cook for 5 minutes
  • Lastly add the green onions and shallots from the top and give it a stir.
And It's Ready.
