Korean Bibim-guksu (Bimbim style Ramyeon)

Hello friends! Few years back I attended a Korean food fest at +Taj Deccan and It made me remember my own Korean food safari :) and I thought I must share it with you all.
My daughter is a huge fan of Korean Culture (K-Culture, including K-music, hangul, K-fashion and K-drama) and she has inspired me to cook korean cuisine as well. I make kimchi as a side dish very often. 
I had made this Ramen ("Ramyeon"-korean instant noodle) and Bibimbap with my daughter a couple of months back. This is how it looked.
Inspired by the Bibimbap and Bibimguksu 


Ingredients for topping:

  • Mushrooms
  • Tofu
  • Red Bell Peppers
  • Tomatoes
  • Red chillies
  • Green Peppers
  • Boiled Eggs
  • Pepper
  • Crackers/ Cheese/ nachos
  • Carrots
  • Cucumbers (pickled)
  • Kimchi (pickled Cabbage)

What is Ramyeon? this is how it looks:
 

What exactly is Bibimbap?this is the picture which inspired me to recreate the dish in my own way..




1)First you serve the hot ramen (Ramyeon) noodles and then 
2)Garnish with vegetables or kimchi or meat. I've used mushrooms, Bell peppers, eggs( boiled), sautéed tofu, carrots sliced thinly ,chickens (you can add boiled and seasoned meat or sea food of your choice)
3)Side dishes are a must in Korean food (Banchan) So I kept crackers. Pickled cucumber 🥒, kimchi ( pickled cabbage), fried mushrooms, blanched and tossed capsicum s and some spiced nuts.

You can garnish with fried eggs thinly sliced, pickles, dongchimi, sea food of your choice (the choices are endless)

Chicken & Bell peppers Noodles

Chicken bell peppers sauce with Soft noodles is a delicious combination and really easy to make.

Chicken bell pepper sauce:

Ingredients:

  • 1/2 kg Boneless chicken, cut into small pieces
  • 2 Big red bell peppers
  • 2 Green bell peppers
  • 2 Yellow bell peppers
  • 3 onions
  • 1 pod Garlic, chopped
  • 2 tsp of chilly vinegar 
  • Red chilly sauce
  • Soy Sauce
  • Tomato sauce
  • 1/2 tsp Black pepper 
  • 1 Tsp Chilly flakes
  • 1 Tsp Sugar
  • 2 Tsp Cornflour
  • 1 egg
  • 2 Tsp of breadcrumbs
  • Salt to taste

Procedure:

First cut all the veggies and keep it aside.

                        

Marinate the chicken with soy sauce, vinegar, black pepper,chilly flakes and sugar, mix one egg and a teaspoon of white oil for binding.
Marinate for 6 hours in the fridge.
Now take 4-5 tablespoons of oil in a wok or a Pan and let it come to the boiling point
In the mean time make a mixture of cornflour and breadcrumbs. And take out the chicken pieces and coat it with the mixture. Add salt according to your taste.just keep it in mind not to add too much salt as soy sauce is also salty.
Now fry the coated chicken pieces and keep it aside.


In the remaining oil first fry the garlic and onion slices.
When they are brown add the bell pepper s and fry only for 2 mins as we don't want the bell pepper store get very soft and soggy.
Now add the remaining marinated mixture and stir it for 1  min.


Lastly add 2 tsp of red chilly sauce, 4-5 tsp of tomato sauce and 2 tsp of soya sauce
Give it a final stir and it's ready.
If you want more spicy you can add green chilly sauce. I did not add as I prefer hot and sweet flavor.


Noodles 
I have used 2 packets of Hakka egg noodles.
8-9 flakes of garlic
4 tsp of Amul butter
Procedure 
Boiled 2 litres of water with salt
Then added the noodles. Let it boil till soft Then drain out the water.
Add 1 tsp to of oil so that these noodles don't get entangled.
Now take a wok and heat 4-5 tsp of butter.
Fry the garlic pieces for 30 seconds and add the boiled noodles and stir it well.

How to serve
In a plate first spread some spaghetti and on top of it serve the required amount of the Chinese chicken you have prepared.
You have enjoy this dish with sauces of your choice.

Bird in A nest

Hi everyone!!
This is one of my most interesting creations. It is great for a get together or brunch with friends or kid's parties! 
It's especially for those mothers who want to make their kids party interesting. Kids are generally difficult to satisfy when it comes to food, But when you present simple food in a cute and attractive way kids love it and eat without any hassle.

This bird's Nest is nothing but:

  • 1 Packet of hakka egg noodles
  • 3 big potatoes (boiled)
  • 100 grams boiled peas
  • Butter: 2 tbsp
  • Salt and pepper according to your taste
  • Oil for frying
  • Some carrot for decoration

Procedure:

1) First boil the noodles properly adding salt and little oil.
Note: Don't over oil it otherwise it will become soggy.


2) Drain the water properly.
 
3) Mix salt and add 3 tsp of oil thoroughly and keep it the noodles aside ready for preparing the basket.

   

4) Follow this very carefully, as this is the trickiest part. Take a medium sized strainer like the above one, put some boilers noodles in it, then in the middle put a small bowl and press it hard to set it right.


5) Now fry the noodles in this position in hot oil making sure the position of the bowl stays intact, otherwise the shape of the basket won't come right. Fry it for minimum 10 min in medium flame or till the whole basket is fried crispy.

6)The crispy basket is ready!!



7) Now let's prepare the mashed potatoes!
Ready to give it a shape of a bird or a duck or may be a swan too (if you have patience), you can give it whatever shape you desire. 
Mix butter, salt, pepper and oregano in the potatoes while mashing it properly. If you want you can add a bit of cornflour for binding. 
Take a tablespoon of butter in a pan and fry the mashed potatoes for 5-6 minutes.
Now keep this aside and let it cool down.


8) Now give the potato mash the shape you want it to be (in my case a bird).


9) Place these birdies in the crispy noodle baskets and decorate the birds with vegetables or candies to make it colorful.


10) Serve it with some boiled and tossed veggies as healthy topping.


I wanted to keep it simple, and healthy so I used carrots for making the bird's wings and beak.
You can get more creative and use different kinds of spices or even chocolate gems for making the bird's eyes! :)

Kids who don't like vegetables will gladly eat these cute birdies in crispy noodle nests! (you can stuff and put in more vegetables for kids)
